Domaine de L’Echevin
Run by father and son team François and Adrien Fabre, Domaine de l’Echevin produces Syrah dominated wine from the small Saint Maurice appellation in the Southern Rhône. The vineyard is organically farmed and sits on a plateau at over 300 meters in elevation, exposing the vines to strong winds. The soil is clay-limestone with a rocky surface featuring some of the famous galets roulés — a hallmark of many of the best sites in the Southern Rhône. The grapes are all hand harvested, and they move through the winery on an entirely gravity-fed system. Each parcel is vinified separately, and the resulting wine spends 12 months in a combination of barriques and demi-muids.
