Ohishi Sherry Cask 8 Year Whisky is rice whisky that has been fully distilled, matured, and bottled by Ohishi Distillery in Mizukami, Japan. Like all Ohishi whiskies, the Sherry Cask 18 Year is distilled from a combination of estate-grown and locally sourced malted and unmalted grains, which undergo a 21-day fermentation before being distilled in stainless steel pot stills. The spirit is then aged 8 years in ex-sherry casks. The resulting spirit shows strawberry, shiitake mushroom, new leather, and licorice on the nose. The palate is lush, expressing quince, underripe pear, and cherry blossom with an oaky and tannic finish, full of cherry blossom and walnut skin. Sherry proves itself a perfect match with Ohishi’s house style of rice whisky, displaying a very heavy influence evocative of a cross between Oloroso and Pedro Ximénez. 42.7% ABV.
