Ohishi Port Cask Whisky is rice whisky that has been fully distilled, matured, and bottled by Ohishi Distillery in Mizukami, Japan. Like all Ohishi whiskies, the Port Cask is distilled from a combination of estate-grown and locally sourced malted and unmalted grains which undergo a 21-day fermentation before being distilled in stainless steel pot stills. The spirit is aged in a combination of Oloroso sherry and brandy casks for 5–6 years, then finished in port casks for 1–2 years. The resulting whisky is all at once unique and familiar, full of confectionary crème brûlée, milk chocolate, toasted almond, and vanilla which mingle with brighter notes of raspberry, key lime, ginger, licorice, and ume (Japanese plum).
