"This is an accessible and ice cream-friendly dessert wine (in a 500-milliliter bottle) made with 85% Assyrtiko, with Athiri and Aidani in supporting roles. The grapes are air-dried under the sun for eight days. The Santo Wines 2020 Santorini Vinsanto Vinsantorini is Vinsanto for beginners, having spent just three years in barrel. It opens to a pretty copper color with lighter amber reflections. It shows dried fig, chestnut honey and apricot over a medium-plus mouthfeel. The wine's lingering sweetness is successfully countered by the crisp acidity of the grapes."
