Grown more than 6 years in the Los Altos region of Jalisco, around 7,000 feet above sea level, this agave is harvested carefully, leaving a maximum of 3 cm of the reproductive stalk on the piña. The extra nub of quiote lends pronounced grassy, herbal notes alongside sweet fruit from the sugars of the ripe piña.
