- 100% Syrah
- Single parcel dry farmed dry land bush vines, planted in the late 80’s in the deep decomposed Granitic soil of the Paardeberg, which the Mullineux’s have worked with since 2008
- Hand picked during the cool early morning
- Whole bunches were put into an open top 500L French oak barrels and foot-crushed
- Fermented with indigenous yeast and punch-downs were only done by hand to ensure gentle extraction
- 4 week skin contact, to highlight and refine the natural tannin structure of the granite soils
- Drained and pressed back to the same barrels for malolactic fermentation and maturation
- Aged for 12 months in French oak 500L barrels, 50% new, followed by 10 months in 2000L Foudre
- Bottled aged for 9 months prior to release
