- Colluvial soils with a high proportion of granite and quartz
- Hand harvested in small crates for strict fruit selection
- Fermented with indigenous yeasts in 4,000L oak tanks and 1,800L concrete tanks
- 50% is aged in used 300L French oak, 6% new 500L Sylvain barrels, and 44% in 800L clay amphora
- Azuda is named after the Azuda wheels, which is the famous water wheel of Almahue. It received the “World Monuments Watch” status in 1999.
