  • Fermented with ambient yeasts in oak cask. Malolactic fermentation and aging in oak
  • Wine rests on its lees for 1 year in 25 hl barrels and used barriques
  • Aged on the lees additional 6-8 months in small steel tanks
  • Rests six months in bottle before release
  • No sulfites are added to the grape must prior to fermentation; Sandro Gini was the first in Italy to try this method in 1985
  • 800 cases produced each year on average

"The 2020 may have been considerably more concentrated than this vintage, and yet there is something more mellifluous, intuitive of feel and graceful to this 2021. A salty lead of preserved lemons, quince, tangerines and stone fruit. Incisive mineral precision and wet pebble complexity. This would make a worthy replacement for a top Chablis. Volcanic and alive. Scored on drinkability quotient. From organically grown grapes. Drink or hold."

"The 2021 Soave Classico Contrada Salvarenza Vecchie Vigne displays a deep golden color, wafting up with notes of crushed almond, stone dust and Asian pear. It floods the palate with rich, textural waves of ripe, mineral-tinged orchard fruits, complemented by minty herbal tones and spice. Its acidity plays a supporting role, providing an unexpected freshness through the long and tension-filled finale. Hints of peach and inner florals fade. The fruit here is bright, but patience will be required."

"The oldest vines in all of Soave: pre-phylloxera centurions, many nearly 140-years-old. The vinosity, sap, mineral undercurrent and sheer persuasiveness of the package, attests to this. A tour de force. Sure, there is the usual crew of stone fruits, ginger crystal, jasmine, frangipani and sea spray salinity. Yet there is also textural persuasion, all chew and chomp, amidst a bowl of scented orchard fruits flecked with botrytised high tones of mango skin. Drinkable now, but best from 2024."

"From Garganega vines more than 100 years old in a small section of the La Froscà vineyard, this wine leads with aromas of jasmine, lemon meringue, hazelnut and baked apples. Excellent concentration and lively acidity, some very subtle wood notes along with golden apple and white peach, then a hint of ginger on the long finish. Beautiful overall harmony."

"The 2020 Soave Classico Contrada Salvarenza Vecchie Vigne opens slowly with a beautiful and nuanced bouquet that blends white flowers with young peach, hints of candied lime and sweet smoke. It,s silky and perfumed with a lovely inner sweetness contrasting saline minerals and lime-tinged orchard fruits. This tapers off with incredible length yet is poised, leaving spicy citrus and sweet herbal tones to resonate. The 2020 remains in a youthfully backward phase, yet it's developing beautifully with time in the bottle."
