- 80% Sireni & 20% Ararati
- Sireni is found at 400 meters above sea level in clay sedimentary soils and is dry farmed
- Ararati is found in the highlands of Vayotz Dzor at 1,300 meters above sea level, which is on the verge of extinction
- Both grape varietals are fermented separately in traditional Armenian karasses, which are buried 3/4 in the ground. The Ararati is with skin contact
- Following fermentation, they are blended together and aged for about 2 years in a mix of clay amphora (karasses) and rough concrete vats with no epoxy lining
- A further aging takes place in bottle for 12 months

"Smells like cherry jam. Violets. Cumin spices fill the mouth and then rust and then apricots and then damsons and it feels like licking a verdigris pipe. Cracked coriander with its citrus and peppercorn heat. A little cigarette-smoky on the back palate, and tannins that feel raw, like earth and rocks. A fascinating wine that seems to constantly kaleidoscopically change. (TC)"
