  • Aged a minimum of 3 years in 63% STR (shaved, toasted, and re-charred) red wine casks, 19% ex-Maury casks, 18% ex-bourbon barrels; non-age statement
  • Aromas of dried apricot, oats, wet cobblestone, and lightly roasted coffee lead to a palate of lemon zest and freshly churned butter with herbs before transitioning to cobbler crumble, green peppercorn, and a hint of salt on the finish
  • Certified organic by the Biodynamic Association (United Kingdom)
  • No added coloring
  • Non-chill filtered; 48.5% ABV

Nc’Nean’s Quiet Rebels series celebrates the team that brings Nc’Nean to life. Nc’Nean’s Head of Sustainability, Amy Stammers, lends her name to this edition, which features casks that previously held Maury—a fruit-forward, fortified French wine—from a small organic vineyard.

"The recipe for this whisky made from 100% organic Scottish barley combines STR red wine and bourbon casks, with a maury (a type of vin doux naturel fortified wine from the Languedoc region of France) cask finish. It's like salivating in a candy store; rhubarb-andcustard sour candies, damson, and lemon zest aromas. Red currant, perky pepperiness, more sour candies, and an intriguing herbal bitterness on the palate, with caraway seeds, dried citrus, pineapple, and red grape. The short to medium finish offers fading fruit. (Release date: 1/25; 10,132 bottles worldwide)."

"The Quiet Rebels series celebrates the distillery's employees. The recipe for this release comes from Gordon Wood, the distillery's manager since its inception. Mouthwatering aromas of wild raspberry, candied citrus peel, plum, apple, and coriander seed. A glossy texture with strawberry, baked orange, creamy chocolate, allspice, crème brûlée, currant, and fig. The STR, sherry, and Rivesaltes casks used for aging the component whiskies create a luxuriously fruity finish with attractive glimpses of red wine."
