"Third-generation winemaker Stamátis Mylonás farms 30 acres of vines on the Attic peninsula, southeast of Athens, where the summers are hot and dry. Savatianó is already prone to giving low-acid wines, so it's the tannins, developed during 20 days of maceration on the skins, that keep this wine in balance. Writer Jamal Rayyis noted its flavors of orange, apricot and spice, while Déspoina Karapostoláki, of NYC's Amali, focused on its aged-cheese aromas, yeasty saltiness, and length, finding that it tastes aged yet fresh."
