Skin contact under inert atmosphere at low temperature, controlled alcoholic fermentation in fine grain, medium toast Vosges oak barrique casks with regular stirring. Maximum 7 months following vinification in the same oak casks.

"Recognisably Sauvignon Blanc in aromas of herbs, citrus and ripe green fruits. On the nose, the impression of oak is very slight, just a touch mealy/spicy. In the mouth, the oak is equally discreet, adding some structure (light grip) and roundness but no real oaky flavour (and this is the point of the 'white-toasted' barrels). The oak just adds another layer of flavour to the excellent fruit. Fresh, layered and long. Happily, this tastes bone dry on the finish even though the fruit is fully ripe. Long finish. (JH)"
