- Aged 5 years in new American oak; finished in new, toasted Seguin Moreau Napa Cooperage barrels and 5-year air dried, heavy toast Canton Cooperage barrels for 3–8 months
- Cherry, fennel, dill, and peppermint on a nose underscored with clove and limestone; a vibrant, piquant palate balances zesty grapefruit and orange peel with cinnamon, charred oak, and apricot jam; finishes dry with notes of ginger, pink peppercorn, and vanilla
- Non-chill filtered; bottled at a cask strength of 53% ABV (ABV may vary batch to batch)
Starlight’s rye whiskey is double-oaked in toasted barrels from Seguin Moreau and 5 year-air dried Canton Cooperage barrels, resulting in a magnificently balanced whiskey which doubles down on all the best qualities of American oak while retaining the unmistakable qualities of Indiana rye whiskey.
