- Fruit is harvested in two tranches – first half is at normal maturation and the second half is 2-3 weeks later. These two harvests are vinified separately and blended before bottling.
- Brief, 8 hour maceration on the skins before vinification in stainless steel tanks
- Matured on the lees for 6 months in stainless steel tanks
- Residual Sugar: approximately 5.8 grams per liter
