- Sourced from their estate vineyard in the western edge of the Upper Galilee at 800m ASL
- Soils are composed of a gravelly flint (silex) clay
- Hand harvested
- Natural fermentation in open-top vats, some of the Syrah is whole-cluster fermented
- Aged 12 months in Austrian oak oval foudres and French oak barrels (all neutral)
- Racked and blended then aged another 6 months in concrete tanks before bottling
