Ripe, highly aromatic raspberries are harvested in August and September before being washed, mashed, and fermented in stainless steel for 5 days at precisely 16.5 °C (61.7 °F). Distilled twice in a Christian Carl copper pot still and rested for 3 years in stainless steel, Reisetbauer’s raspberry eau-de-vie requires 33 kg (nearly 73 lbs) of fruit to produce a single liter.
