"Chewy, textured. Rich and full in the mouth. Great freshness from the variety. Leesy, rich texture. A touch smoky - still has the minerality of Assyrtiko but with more complex winemaking influence and less emphasis on the place of origin. (JH)"

"The 2021 Santorini Plethora could be interpreted as Vassaltis Vineyards' version of a Nikteri, although proprietor vintner Yannis Valambous long ago decided not to make that PDO wine. This 100% Assyrtiko is harvested overripe (from 90-year-old vines in Vourvoulos) and matures in 30-year-old barrels that are not topped up. This allows for gentle oxidation. The wine matures for 12 months in oak and is cellared for two years before its release. Production is limited to 2,000 bottles. Plethora shows a soft nuttiness with light buttery notes. You also get poached pear and quince over a glossy, medium-plus texture and bright freshness. We discussed food pairing options for this wine, and roasted lamb was the favorite."
