"Subtly spiced and deeply fruity, this wine has a great track record for improving with age. Rich in dark plums, black cherries, mint, cinnamon and pine accents. "The exposure that Mineral Springs has to the winds coming out of the Van Duzer Corridor hit the estate head-on and has a significant effect, cooling during hot times and providing warmth during colder times. It also dries out the air around vines, creating additional vine stress. This creates more skin tannin, barrel-aged for 12 months. Four months in tank allows the wine to move away from oxygen pungent earth and floral aromatics with a kiss of white pepper and mint to lift. An ample structure sets the frame for red fruit and savoury spices. 40-50% whole cluster year in and year out on average."
