To capture the elegance of the fruit, and avoid excessive extraction, the wine spent just 10 days on skins, with relatively short pump-overs twice per day

Malolactic conversion occurred spontaneously in a combination of 2000-litre conical-shaped Austrian oak foudre and 300-litre Burgundian oak barrels, 25% new, with lees contact for eleven months of maturation

"Transparent garnet. Vegy nose but not to excess and really rather appetising sweet, but not superficial, fruit. Then light, dry tannins on the end. Nice! Such good balance I was tempted to swallow this. GV"
