"The very pale salmon-colored 2022 Phaunus Pet Nat Rosé was produced with two very different varieties, half of each, Vinhão, with a lot of color, acidity and tannin, and Alvarelhão (Brancellao or Alvarello in Spain), with little color and tannin. The varieties were picked at different times and fermented separately, then blended and put to finish fermenting in bottle, where the wine remained until it was disgorged in November 2024. It's harmonious and complete, clean and fresh, with good ripeness, 11% alcohol and very good acidity. It feels almost like a white. The disgorgement data is not, for now, printed on the labels. This is sold without appellation, as ancestral sparkling wines are not a category within the appellation. 17,000 bottles produced."
