"Nice lift of refreshing lemons that reminds me a bit of Sprite, with stones, macadamia nuts, fine lees and brioche on the nose. Textured and saline on the palate, with a medium to full body and a nicely phenolic finish. From organically grown grapes. Drink now."

"The organic unfortified white 2022 Sábalo was produced with Palomino from two vineyards, one in Balbaína and the other one in Burujena, fermented separately in small stainless steel vats with indigenous yeasts and kept with fine lees for four months. It's bone dry, with 11.5% alcohol and a pH of 3.2. It has more development and reflects the warmer and drier conditions of the year and seems to be evolving at a faster pace. It's round and gentle, tasty, with a tender mouthfeel. 24,000 bottles produced. It was bottled in March 2023."
