Palo Cortado, 'Obispo Gascón'

Aside, of course, from manzanilla, palo cortado is something of a specialty for Barbadillo. Obispo Gascon, the flagship palo cortado of the house, is bottled at a majestic fifteen years of age, and shows particular finesse for a (mostly) oxidatively-aged wine.
