"The 2021 Pa¡s comes from 180-year-old vines in ¥ipas on sandy silty black basalt soils by the river Itata, only 0.9 hectares. It fermented with 100% full clusters and indigenous yeasts in open wood and stainless steel vats with foot treading and then had a soft extraction and 21 days of maceration. It matured in Slavonian wood tanks (no toast) and demi-muid neutral barrels for 11 months. The wine is a little wild, with some meaty notes that change in the glass toward more refined and focused/cleaner aromas of flowers and herbs with varietal typicity. It has 12.8% alcohol with good balance and freshness. There's finesse and texture, with a very fine thread and good grip. It's textbook Pa¡s with personality and precision. 4,000 bottles were filled in February 2022."
