Formulated to act as the perfect vermouth for a Dirty Martini, Veso’s Olive Vermouth is a savory and herbaceous vermouth made from local California wine produced using organically grown grapes, olives, and other botanicals as well as wild foraged kombu—a kelp used to amplify and add umami. Each batch begins with a three-to-four-week maceration of fresh, unpasteurized Italian Castelvetrano olives in neutral grape spirit while the olive brine is reserved and fortified for stability. The olives are then pressed, and the remaining botanicals are added to the infusion along with white wine and the fortified brine for an additional maceration. Lastly, a kombu infusion is added, and the entire blend is filtered and sweetened.
