- Chenin Blanc
- Sourced from the parcels of old vine Chenin Blanc that give the best acidity at harvest
- The vines are planted in the stony Schist based soils of the Kasteelberg and the decomposed Granite based soils of the Paardeberg
- Grapes are hand harvested at normal ripeness and left to dry in the shade of some trees for a few weeks
- Once they are shriveled halfway, they are crushed and pressed whole bunch into old 225L barrels
- Naturally fermented for around 9 months and finishes on its own, with no fortification or filtration
- Each vintage, a barrel or two of Straw Wine are held back and blended into a Solera system

"Gorgeous aromas of apricot puree, chopped nuts, toffee, sweet spices and candied oranges. Immensely concentrated, sugary but perfectly resolved and balanced with zesty, high acidity. A superb sweet wine. Chenin blanc from a solera system started in 2008. Drink or hold."

"The NV Olerasay 4 is the solera that now contains vintages between 2008 and 2023 of their straw wine. It presents a slightly burnished amber hue. The bouquet is very concentrated, displaying scents of lanolin, marmalade, candle wax and just a slight nuttiness. The palate is beautifully balanced with a viscous texture (obviously) and flavors of tangy marmalade intermixed with apricot, mango, a touch of ginger and quince. Very long yet fresh on the finish, this is utterly enchanting."
