One of the most significant distilling communities in Oaxaca, Ejutla, is famous for their local style of mezcal distillation, employing a small hybrid condensing chamber (refrescadera) in between the copper pot and the cooling coil. This allows the spirit to further rectify during distillation increasing purity and concentration (as well as proof) in a single pass.

Tasting Notes
One of the most significant distilling communities in Oaxaca, Ejutla, located just 35 miles south of Oaxaca City, is famous for their local style of mezcal distillation, which employs a small hybrid condensing chamber (or “refrescadera”) in between the copper pot and the cooling coil. This tiny set of condensing plates allows the spirit to further rectify during each distillation run, increasing purity and concentration of alcohol – and thus, proof as well.
Batches for Nuestra Soledad from the community will be produced alternately by either the notorious brothers Gonzalo and Gregorio Hernandez (one-time operators of the defunct “Mr Mustache” brand of mezcal) or their neighboring mezcalero, Don Pablo Vasquez. Produced from 100% sustainably harvested Espadin (Agave angustifolia) which is cooked in a conical earthen oven, milled by stone tahona, and fermented in wooden tanks before being distilled in twice in traditional copper pot stills, both are of exemplary concentration and elegance, with a dry, dusty vibe reminiscent of corn husks, masa, dried herbs and gentle orchard fruit. 47% ABV (Alcohol will vary from batch to batch).
