Tasting Notes
Lachigui is located deep in the mountains of Oaxaca’s coveted southern district, Miahuatlán. Hours of winding switchback roads lead you to “Tio” Pedro Vasquez and his hidden rancho palenque, where he distills both wild and cultivated agave of numerous varieties into some of the most transcendent spirits in the world. The agave is cooked in conical earthen oven, milled by hand with an electric grinder, and fermented in wooden tanks before being distilled twice in traditional copper pot stills. This Espadín is exemplary: high-toned, with notes of freshly cut grass, mint and underripe banana at the outset, and rich aromatics of cedar wood and cigar box following. Green pepper, wet soil and fresh cherries on the palate with bright, citric acidity and a long, earthy finish. 49% ABV (Alcohol will vary from batch to batch).
