• Fermented using well water in open-air sabino (cypress) wood vats (tinas)

This 2025 release comes to us from the beloved Paula Aquino Sanchez, partner in life and work with another mezcal icon, Hermogenes Vasquez. Their palenque is situated in the storied distilling community of Logoche, deep in the southern mountains of Miahuatlán, and is truly a family affair—Paula and Hermogenes produce mezcales together, and their two young sons have begun producing incredible batches as well. Everything they make shares a distinct quality, a sign of both provenance and heritage technique, with herbaceous and nutty aromas dancing alongside subtle fruit notes and crisp minerality.
