  • Cooked for 3 days in an oak-fired conical stone oven then rested 3 days
  • Milled using a combination of axe, machete, and small mechanical grinder
  • Fermented 5 days in cypress wood tanks (tinas) using ambient yeast and well water
  • Distilled twice using an alembic copper pot still
  • Aromas of oxidating red apple, sweet potato, sweet pea, and burnt sugar; bright herbs arrive on the palate alongside richer notes of Bosc pear, candy corn, and stewed plum
  • 540 liters produced in September 2022
  • 48% ABV

This mezcal is delicate yet dense, with a pronounced balance of sweet and heavy texture contrasting the bright and falsetto profile of the species. Thrilling for novices and Agave karwinskii heads alike, it straddles a line between classical profile and unique approachability.
