- Fermented 5 days in cypress wood tanks (tinas) using ambient yeast and well water
- Distilled twice using an alembic copper pot still
- Aromas of oxidating red apple, sweet potato, sweet pea, and burnt sugar; bright herbs arrive on the palate alongside richer notes of Bosc pear, candy corn, and stewed plum
- 540 liters produced in September 2022
- 48% ABV
