- Heavier clay, rocky soils, and lighter, loamy soils
- Hand harvested in small batches
- Each parcel is fermented separately with indigenous yeast in open top fermenters
- Aged 19 months in seasoned French oak barriques
- Bottling is carried out by hand with no filtration
