• Mash bill of 100% New York-grown grain that includes 80% malted barley, 15% unmalted barley, and 5% oat
• Produced using water sourced from aquifers around Seneca Lake, the deepest lake in New York
• 4–7-day open top fermentation
• Double distilled in a 350-gallon Holstein copper pot still
• Aged for a minimum of 4 years in heavy char, ex–McKenzie bourbon and rye barrels
• Expect notes of freshly baked bread, green apple, honey, and chamomile with a rich, silky texture
