"This is a new addition to Barbadillo,s vast portfolio. The grapes come from two organicallyfarmed single vineyards. First bottled in fall 2023 from a newly established solera withjust three years of ageing, this is a perfect example of a modernised style of dry sherry:clean, zesty, fruit-driven, with the yeast influenced toned down. The result is an ethereal,transparent expression of Palomino not unlike some vinos de pasto, with a characteristicManzanilla olive-like tang and plenty of green apple juiciness. Dangerously drinkable!"
