Isojiman has taken great care in sourcing the very best sake rice available for over 30 years, back at a time when that was not a priority for most of the industry. Rice farmers have remained loyal to the brewery as well, often sending their best harvests to the brewery. The Isojiman Junmai Ginjo shows remarkably bright tropical fruit with notes of apricot and pear, all made possible by AAA rated Yamada Nishiki rice from Hyogo Prefecture, milled to 55%.
