This is the first of nine high ester blended rums crafted in response to increased demand for the lesser-known marques from Diamond Distillery’s fourteen operating stills. The El Dorado High Ester Blend is a blend of two marques: the Diamond High Ester (DHE) marque and the inherited La Bonne Intention (LBI) marque. Rum nerds take note—the DHE marque is distilled in Diamond Distillery’s John Dore double retort copper pot still from a wash fermented over several months, resulting in final ester levels over 1,500 g/hL AA (grams per hectoliter of absolute alcohol). Expect a concentration of rich fruit and confection rather than gamey hogo.
