- Decomposed granite and clay shale
- Hand harvested, with a combination of de-stemming and whole bunch
- Fermented with indigenous yeasts in 85% stainless steel, 8% seasoned barrels & 7% clay amphora
- Bottled after 5 months on the gross lees
