- Each variety is gently whole-bunch basket pressed then goes through primary fermentation in neutral French oak
- Lees aging for 8 months in French oak then blended and bottled
- Slow, cool secondary fermentation and lees aging in bottle for 5 years
- Riddled and disgorged in 2022 with a dosage of 8g/L
