Inspired by the taste of green salsa with wild cilantro and the pleasure of eating a chicken soup seasoned with hoja santa, this batch is fresh and vibrant, and guaranteed to make mouths water. The oily texture and delicate dance of cilantro and the fennel-reminiscent warmth of hoja santa makes for a joyful pairing mezcal, such that some visitors to Erick’s tasting room in Mexico City have unwittingly likened it to an aperitif, saying, “this mezcal makes me hungry!”
