- 100% Papalome (A. potatorum)
- Cooked in a traditional earthen pit oven
- Milled in stone, using a wooden mallet (mazo)
- Fermented using river water in oak wood vats (tinas)
- Distilled twice with a hybrid Filipino-style pot still of copper & wood
- Candied gala apple and bosc pear, cacao, caramel, tobacco leaf, fresh leather, damp soil, a hint of dried herbs
- 50% ABV (ABV may vary batch to batch)
The first mezcal we’ve seen stateside from the eponymous Estado de Mexico (the small but densely populated state which neatly surrounds Mexico City on three sides), this one is an eye-opener. While “Edo. Mex” is one of the most densely populated places per square mile in the hemisphere, its Malinalco region is home to the state’s highest biodiversity, dominated by tropical, pine deciduous, and gallery forests teeming with flora and fauna. It is in this humid and generous region that Marcelino Perez harvests his Papalome (A. potatorum), more widely known in Oaxaca as Tobalá.
