- 100% Madrecuixe (A. karwinskii)
- Coked in a conical earthen pit oven
- Crushed using a traditional stone tahona mill
- Fermented in open air cypress vats (tinas)
- Distilled twice using a traditional copper pot still
- Super Tropicália! Pink Starburst, strawberry seeds, banana leaf, pineapple skin, papaya, custard apple, freesia blossom, mineral notes of flint, slate, and pocket lint…and a subtle whiff of black eyed peas or aquafaba on the nose
- Distilled in in April 2023; 80 liters produced
- 46.6% ABV (ABV may vary batch to batch)
A remarkable example of Miahuatlan’s famous Agave karwinskii—in this case, the maternal Madrecuixe—showing an overwhelming bouquet of flowers and sweet tropical fruits and given structure by a subtle minerality and the species’ trademark legume/vegetal profile.
