One of the fourteen-plus subvarieties of Agave angustifolia identified and cultivated by Macario and Miguel Partida, Cimarrón takes around seven years to reach maturity. The family harvests the agave after 3 years capón with maximum sugar concentration. A particularly fruit-forward example of Chacolo’s unique and historic mezcales, with notes of raspberry, chocolate, bubblegum, lemongrass, candied ginger, and orange zest, this is arguably the most crowd-pleasing and approachable batch Chacolo has offered stateside mezcal enthusiasts to date. It’s a joy from start to finish that opens up brightly, given some patience, after pouring!
