- Noir de Bourgogne blackcurrants grown on the slopes of the Burgundy Grand Crus around Nuits-Saint-Georges are harvested in July and immediately frozen until use. The fruit is macerated in neutral sugar beet distillate at room temperature for 4–5 weeks.
- The infusion is decanted, but not filtered, and slowly blended with sugar beet sugar
