The Rosé de Saignée is a rosé produced by maceration of black grapes; from 24 to 36 hours, the grape juice flows by gravity, without pressing and without filtration; in contact with the skin of the grapes, the juice obtains a ruby color and tannic aromas.
Monovarietal, parcel-based and vintage, the Rosé de Saignée is only produced during the best years in Champagne, because the bleeding process requires an excellent sanitary state of the grapes, especially the Meuniers!

"The NV (2018) Brut Rosé de Saignée is unusual in that the base vintage is 2018, but the wine was only disgorged in 2023. It's the sort of Rosé de Saignée one rarely sees much anymore these days—a dark, intense wine loaded with gamy, earthy Meunier character. Macerated dark cherry, spice, blood, lavender, rose petals and licorice are beautifully amplified. This dramatic, large-scale Rosé is not for everyone but will thrill readers who enjoy the style. Vinified and aged entirely in stainless steel, the dosage here is 6 grams per liter. Disgorged: January, 2023."
