Cabernet Sauvignon, ‘California’, Joel Gott
Napa fruit comes from highly regarded Howell Mountain as well as South Napa vineyards and is complex with great depth; Lake County fruit is from the Red Hills Appellation, planted on obsidian volcanic soil, which lends minerality and rich texture; Central Coast fruit from Paso Robles and Hames Valley in Monterey County adds good flavor maturity and development. Sourcing from these varied regions across California helped to create an elegant, balanced wine.
After harvest, fruit from each vineyard is hand-sorted at the winery and de-stemmed before being fermented in individual lots. The lots are aged for just over a year in oak, and tasted frequently for tannin flavor development. Finally, the lots are blended to balance the characteristics of each vineyard.
