This sparkling is produced from three varieties (Pinot Noir, Grüner Veltliner, Riesling) selected from different sites of the estate. The grapes are harvested and placed in small boxes then immediately pressed. After six months of élevage in cask, it is bottled. It then rests for about three years on the lees until it is hand riddled and then disgorged.
