"Gimonnet's 2020 Brut 1er Cru Blanc de Blancs Gastronome, disgorged in July 2024 with four grams per liter dosage, is a considerable step up from the non-vintage cuvées. Soaring from the glass with scents of citrus fruit, fresh hazelnut and white flowers, it is ample and textural, structured around ripe but vibrant acids and concluding with a chalky finish. Gimonnet aficionados will remember this is a wine that's produced with lower pressure, hence the smoother mousse."
