  • All estate fruit from the Centennial Mountain Vineyard in north west Sonoma County
  • The vine material is Salvo Foti Selection from Milo, Sicily.
  • The vineyard is 2,000′ elevation  
  • This rocky topsoil 6″to 18″. The soil below that is Metamorphic Franciscan Shale, Schist and Quartz
  • Hand-harvested
  • Native yeast primary and malolactic fermentation
  • Wine fermented 100% de-stemmed, was pumped over twice a day and maceration went from 9 days to 30 days, depending on the grape
  • All seasoned 225L up to 2500L Casks for 20 months
  • 14.5% ABV
