- All estate fruit from the Centennial Mountain Vineyard in north west Sonoma County
- The vine material is Salvo Foti Selection from Milo, Sicily.
- The vineyard is 2,000′ elevation
- This rocky topsoil 6″to 18″. The soil below that is Metamorphic Franciscan Shale, Schist and Quartz
- Hand-harvested
- Native yeast primary and malolactic fermentation
- Wine was pumped over twice a day and maceration went from 9 days to 30 days, depending on the grape
- Aged in 25hL cask and neutral barrels
- 14.5% ABV
