"After being aged in 500- and 228-liter barrels with complete malolactic fermentation, the 2020 Mae Estate Sparkling Blanc de Noir Extra Brut was disgorged in the summer of 2023 and received a dosage of two grams per liter. Beautifully pure, composed aromas of white cherries, macadamia nuts and white chocolate lead to a graceful, succulent palate with an impressively refined, silky mousse. The finish is crunchy and lively, showing great chalky persistence—an uncommonly complete, focused and precise iteration of domestic sparkling wine."
