- Skin maceration for 12 days, followed by a 20-30 day fermentation in stainless steel with indigenous yeast

"Seductive and charming with cherries, crushed raspberries, warm herbs, bark and baking spices. Full body with fine tannins and bright acidity. Well-weighted with a succulent core of sour cherries and red currants at the center and a dash of citrus too. Focused and poised with a long finish. Try after 2028."

"Serralunga d'Alba. Lustrous mid ruby. Leafy cherry nose that is still not entirely open and with a hint of garden herbs. Reduced? Succulent, mouth-filling red fruit with quite stubborn, slightly drying tannins. Long but the slightly drying tannins dominate the finish. (WS)"

"Dark red in color, the 2020 Barolo Prapo displays a riper and sunnier profile, with rich aromas of black cherries, lavender oil, balsamic, and tarry earth. Medium to full-bodied, it's weightless on the palate, with a savory note of tea leaf upfront as well as hints of cherry pit and walnut, and it has a long finish. It's a bit more broad-shouldered but wears it with a graceful touch. Drink 2026-2046."

"This is a new and exciting wine added to the Paolo Scavino portfolio, with fruit from a tiny 0.2-hectare plot in one of the best crus in Castiglione Falletto. The Scavino family has owned this site since 1996, and before now, this fruit went to the Barolo Carobric. The 2020 Barolo Rocche di Castiglione has upfront ripe fruit and cooked cherry. Most importantly, this expression is cleared up in terms of aromas, especially when compared to some of the other single-vineyard new releases. The fruit is a little soft or baked, but you also get spice, cola and tar. This vineyard site is always distinguished by a very clear mineral note that gives sharpness and focus to the wines made here. This is by far my favorite wine from Paolo Scavino from the 2020 vintage. Only 1,200 bottles were made."

"Linear in profile, this red starts out on the elegant side, boasting currant, cherry, iron, earth and wild thyme flavors. The dense, dusty tannins flex their muscles on the finish. Feels a little compact now, yet there's plenty of fruit, and this should open nicely. Best from 2028 through 2045. —B.S."
