- Maceration and fermentation in stainless steel with indigenous yeasts followed by malolactic fermentation in oak barrels
- Aged in neutral French oak barrels for 10 months with an additional 12 months in large casks

The beautiful aromas carry over to the elegantly structured, delicious palate along with succulent Morello cherry, crushed raspberry, cinnamon and mint. Taut, fine-grained tannins provide seamless support while fresh acidity keeps it balanced and vibrant. A fabulous showing, this will be even better in a few years. Drink 2028–2036. Abv: 14.5%"

"To be released in January 2025, the Paolo Scavino 2021 Barolo is bright and vivid, showing the focus and character of the vintage. This sample is still quite tight, and the tannins are firmly knit. However, the tannins are more elegant and silkier in the 2021 compared to 2020. I recommend giving this wine more time in bottle to allow it to fully flesh out."
